Wheat Gluten from El Granero Integral is a protein obtained from wheat flour by washing the starch.
Indication
Gluten is the protein of wheat, so the nutritional value of this type of flour has a high amount of protein. It is used in many recipes because it gives volume and consistency to dishes. Mixed with water, it acts as an emulsifier and gelling agent, that is why it gives more body to the dough that is being cooked. Wheat gluten is used to make seitan, which is better known as vegetable meat. Another great use of gluten is to enrich flours that we use in bakery and pastry giving them strength.
