Alfalfa is native to the Middle East and is currently grown in temperate regions around the world. It is a forage plant of the legume family. Its flowers are bluish in color and the fruit is a small legume coiled in the shape of a snail. The aerial part of the plant is used. Alfalfa is rich in mineral salts such as calcium, phosphorous, iron and potassium and in vitamins such as C, K, D, E and carotenes. It also contains saponosides, tannins and isoflavones.
