Dissolve the kuzu in equal parts cold water and add slowly to sweet or savory sauces, stirring over heat until it thickens and becomes translucent. Use one tablespoon for each cup (240ml) of liquid. Kuzu has a smooth texture and a neutral flavor. It is ideal for thinning soups and stews, sweet and savory sauces, glazes and cake fillings.
