Apart from white sugar, today there are many types of organic sugar suitable for all kinds of needs. For example, brown sugar, brown whole sugar, cane sugar, birch sugar, coconut sugar, etc. Other varieties such as panela, which is made from unrefined sugar, are also becoming increasingly popular.
Difference between white, brown and whole sugar
White sugar or blanquilla, the best known, is obtained from beets or sugar cane and undergoes a refining process that gives it its characteristic color. For its part, brown sugar is prepared in a similar way to white, but molasses (cane juice) is added, which gives it a distinctive color and flavor. Finally, brown whole sugar is unrefined, stickier and sweeter sugar.
What type of sugar is healthier? The elaboration process is similar in all three cases, so the properties of sugar vary little; although whole brown sugar is the least processed and therefore preserves more nutrients.
Panela and other types of sugars
Although in Europe we mainly take sugar from beets, cane sugar, a base of products such as panela, is increasingly present. Panela is a paste obtained from unrefined cane sugar syrup, which has all the benefits of whole brown sugar and is presented as a block or ground.
In addition to cane and beet sugar, there are other types of sugar such as birch sugar or coconut sugar. They are sugar substitutes with additional benefits.
