Which algae are edible?

Algae are the vegetables of the sea and as such we can find many species, which also vary depending on the part of the world where they are obtained. Some of the best known and used edible seaweeds in cooking are nori seaweed, used to wrap sushi; the versatile wakame seaweed; or kombu seaweed, with its characteristic “umami” flavor.

To cook dehydrated algae, you first have to hydrate them with a little cold water and after a few minutes they will be ready to add them to your salads, stir-fries or stews.

Which mushrooms are edible?

Climate change is reducing the length of intermediate seasons such as autumn, making the season for enjoying edible mushrooms shorter and shorter.

However, we can find a wide variety of dehydrated mushrooms perfect to provide a healthy and different touch to our dishes. For example, shiitake mushrooms, which are the most consumed in the world and are great in stir-fries or pasta; reishi mushrooms, with medicinal properties; or local edible mushroom species such as moixernons , senderuelas, or perrochicos.

As in the case of algae, to cook dehydrated mushrooms you just have to add water and wait a few minutes until they recover their volume. To enjoy!
