Indication

Buckwheat is part of the Polygonaceae and not of the grasses. Buckwheat is more like sorrel or rhubarb. With its broad leaves, its triangular brown or gray seeds, buckwheat seems to have nothing in common with other cereals. Buckwheat is said to originate from Northeast Asia. It will be found in Europe in the Middle Ages, brought by the Crusaders. Once husked and then roasted, buckwheat is called kasha. The latter has a more pronounced taste than buckwheat. Today, this seed is widely consumed in Eastern Europe, where it is a regular on the menu. Kasha is mainly consumed in Russia, but its flavor is waiting to be rediscovered here.
