Salud Viva xanthan gum is an ideal product to thicken hot and cold preparations at low concentration. It provides sponginess in gluten-free preparations and is used as an egg substitute. Source of fiber, calcium and magnesium.

Indication

Xanthan, Xanthan gum or corn gum is a fine cream-colored powder obtained after the fermentation of corn flour starches by the microorganism Xanthomonas campestris. A tasteless, odorless polysaccharide with numerous health benefits.

Intake mode

It is recommended to use to bind homemade gluten-free breads and make them more fluffy; to replace fat and egg in mayonnaise; to thicken sauces, dressings, yogurts, juices, drinks, ice cream topping, etc.; to emulsify vinaigrettes and to stabilize meringues.

  • For liquid foods: mix between 2 and 4 g of xanthan gum for 1 liter of hot or cold liquid. To avoid the formation of lumps, it is recommended to use a blender. Increase or decrease the amount of Xanthan gum to achieve the desired texture.
  • To use it with flour: mix directly and stir.
  • For elaborations with fats: add after the oil or any fat. Stir until you get the desired consistency.

Precautions

May contain traces of nuts and sesame.

Storage conditions

Store in a cool place (below 18ºC), dry, protected from sunlight and isolated from the ground.
